Couscous and berries salad

For the last couple of days the mercury in the thermometer is getting higher and higher. Hooray to the Spring !!!!

I wish I could be 5 year old again and fly a kite up and down the hill. I feel so full of energy.
The sad Winter has gone, time for colorful ingredients.
Usually over the weekend i take my time when it comes to breakfast, even make some baked goodies before everyone is out of their pajamas. But not yesterday, all I wanted was my plate to scream SPRING
Couscous and berries salad
I was thinking of making some berry salad for breakfast but I saw a pack of couscous in my pantry and since it’s easy to cook I thought it may be a great addition to the berries. Oh, and it wasn’t just quick but also healthy and delicious breakfast.

Let’s turn the stove on and make the couscous. 
In a small sauce pan brig to boil 1 1/2 cup pulp free juice (i used pomegranate juice) and 1 stick of cinnamon
Pour it over 3/4 cup couscous
Cover and let until the liquid is absorbed, about 5-7 minutes.
When done, fluff it up with a fork.
Add 2-4 cups of your choice of berries
and enjoy

Ingredients

Those fresh berries make me long for warm weather. Couscous and berries is a wonderful idea. I love how you could eat it any time of day. Thanks for always inspiring me with fantastic ideas in the kitchen!

This is so neat! I've never thought of using cous cous in this way. It's always just garlic, salt, and butter for me. I want to try this out!

Roxana-This is such a good tip for breakfast. I love couscous, but never made it for breakfast with berries.

I've never tried couscous for breakfast, but why not? I've got some whole wheat couscous in my cabinet – will have to give this a shot.
