Cranberry Scones

This is going to be a short post.
Not because it’s just before 7 but because you have to make these scones for breakfast today.
They are THE BEST cranberry scones I’ve ever had.
They are the softest, flakiest scones I’ve made. Not to mention they are so pretty!
Cranberry scones
Ingredients
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
pinch of salt
1/3 cup sugar in the raw
6 tbsp. cold vegan butter
1/2 cup roughly chopped cranberries
scant 1/2 cup So Delicious cultured coconut milk
Directions
Heat the oven to 425F.
In your food processor mix the flour, sugar, baking powder and salt. Pulse few seconds. Now add the cubed cold butter and pulse a couple of times until the mixture resembles crumbs.
Put the flour mixture into a bowl and mix in the cranberries.
Slowly mix in the cultured coconut milk.
With floured hands remove the dough from the bowl, shape it into a disc and press down onto a scone pan if you’re using one or put it on a baking sheet, cut into 8 wedges and bake until slightly brown. (~15 minutes if using a pan, little longer if baking on a cookie sheet)

Roxana…I have fresh cranberries in the freezer and I will definitely try this out since you say it is the BEST ! :) :) thanks for sharing this soft and flakiest scones recipe. Yea, they are cute too !

They look great, but I can never eat more than few bites – scones are too dry for me in general. Same problem with biscuits… but I do love the cranberry flavoring. Maybe one day someone will invent a moist scone for me, haha! ;)

my parents are coming in for a quick visit and I was just thinking i wanted a breakfast treat to make for the morning that is new and fun and then I see this recipe. I love using cranberries this time of year- awesome

Fluffy goodness with a hint of tart cranberries…I am in! You have such a talent for breads of all sorts-I would definitely be a regular customer if you had your own bakery close by me! Another terrific, delicious recipe-well done!

By far, cranberry scones are my favorite scone. It used to be blueberries but I'm all about cranberries and my daughter and I can eat 1.5 (3 for us). =) Your cranberry scones look absolutely delicious!

I just made these. After popping them in the oven, I realized my sugar was still sitting out. It is called for in the ingredients but is not in the instructions. Where does it belong? It was too late to mix it in, as I assume it should be so I just sprinkled it on top. Hope they turn out.

Hi Jenelle,
I'm so sorry I left the sugar out of the instructions. You should have mixed it with the flour, at the very beginning.
Hope they turned out well.
