Crunchy Chocolate – Almond Cookies

Today is Wednesday that means another MOPS meeting. Unfortunately I could not make it today :( but that won’t stop me from sharing with you the cookies I made for today’s meeting.

Everyone has a favorite chocolate chip cookie recipe. Some like the cookie gooey some like it crunchy. We like them both ways, but prefer the crunchy ones. Now, to get the crunchy bite I add nuts to the batter. Depending on what I have in the house it can be peanuts, walnuts, hazelnuts, macadamia or almonds, like I did yesterday.

It was the first time I added slivered almonds. They turned out perfect. I rarely use the chocolatealmonds combo,  most of the time I’ve used hazelnuts and chocolate – stop dreaming about Nutella – peanuts and chocolate – who doesn’t love this combo- and sometimes walnuts and macadamia
If you have never tried almonds and chocolate it’s time you do so, trust me, you’re not going to be disappointed.

I’ve never been good at Maths and yesterday I proved it. Instead of making a batter for at least 3 dozen cookies I only made 2 dozens. Now, since we are around 20 or even more sometimes at the meeting I had to keep my husband away form the cookies. Now imagine his sorrow when I told him this morning I’m not going to the meeting and he can enjoy some cookies with his coffee.

Let’s turn the oven on and start baking.
 
Crunchy  Chocolate – Almond Cookies
 In your mixer bowl, cream 1 stick of butter with 3/4 cup sugar until light and fluffy. 
 
 
 
 
Add 1 egg and vanilla extract. Mix well. 
 
Mix in 2 cups of all-purpose flour and 1/2  tsp baking soda
 
Add 1 cup slivered almonds and mix using a whisk or a wooden spoon.
 
 
In the end add 1 cup of chocolate chips. I used 60% cocoa. 
 
 

Heat the oven at 350F. Meanwhile place spoonful of cookie dough on baking trays.
 
 
Bake for 13-14 minutes.

I like the addition of almonds in your chocolate chip cookies and I also like the bright red ribbon woven through the white dish. I'm sure your cookies were a big hit at the meeting. The new site is beautiful, congratulations and I hope it works out well as your new home;-)

I'll take the combo with any nut type any time. I however, never made them with those chunkier almond slivers…hmmm, nest time for sure.
Roxana, I get the feeling that both our Hubbies are terribly spoiled in the sweets department ;o)

I love almonds and chocolate together, but hadn't tried adding almonds to chocolate chip cookies before. Of course this is delicious! Yours look perfect. :)

I just adore that plate you used for your pictures. It really makes your cookies stand out and grab my attention. Chocolate chip and almond sounds like a delicious combo for a cookie.

what a gorgeous cookie!! they do look so tempting, I can understand how your husband felt when you told him he could eat them….overjoyed was probably an understatement!
Your images are beautiful, I can really see a big improvement in them, I don't know what your doing but keep it up!

Your cookie photos are beautiful!!! I love nuts in my cccs, but I'd get a rebellion from my family. I'm thinking I need to put a few almonds into some of the cookies and reserve them for me :)

These look perfect! I love how you included that picture of the inside of the cookie…it made me drool. I love almonds and chocolate, so I'm sure these would be a hit. Roxana-I'm with you…I also love crunchy and soft and chewy cookies. Both ways are great. Love your version of the chocolate chip cookies, and the photos, especially the beautiful white platter with the sweet red bow woven through it!
