While I’m enjoying time with my family in Romania several of my favorite food bloggers (born outside US just like me) are sharing their culinary talents with you.
When Roxana told me she would be in Romania for holidays and needed someone to do a guest post, I was more than happy to agree. After all, her blog is fantastic and she is so sweet that I could never even imagine saying “no” to her
The recipe I am sharing today is for a fruit sauce. This is something my mom has been making for as long as I can remember and it tastes delicious with cakes or even on a slice of bread!
As a kid, I used to sneak into the kitchen at nights, open the refrigerator and eat spoonfuls of this fruit sauce just on its own…hahaha
1/3 cup brown sugar
1/3 cup granulated sugar
Pinch of cinnamon OR 1 teaspoon of vanilla extract (both are optional)
Chop up all your favorite fruits into small chunks. I used apples, pears, kiwis, apricots, strawberries and peaches. Throw all these fruits into a saucepan.
Add brown sugar and granulated sugar. you can add more or less depending on your preference.
You can also add some cinnamon or vanilla extract if you wish.
Cook this on medium to low heat. Do not let it stick to the base of the saucepan and burn!
Continue to cook until your fruits become soft and the syrup becomes thick. The color would also change and become reddish or brownish depending on the fruits you used.
Allow this fruit sauce to cool while you complete the next few steps.
Bring out your baked vanilla cake and place it on a cake board. I used a dome cake pan which I got from Michaels and I love how the cake ended up looking so round and cute….lol.
Cover this cake with vanilla icing. You can buy it or make it (whichever you prefer)
While the icing is still wet, sprinkle shredded coconut…mmmmmm!
Remove all the excess coconut from the cake board.
Decorate your cake by placing spoonfuls of fruit sauce around the cake and all over the cake. I also added some almonds to make it look a little more pretty.
Note: If you have left over fruit sauce, store in a sealed jar in the refrigerator. Try to use it up within one week.
