Honey pine nuts muffins

Has it ever happen to you not to find your words to write a blog post? I’ve been meaning to post about these muffins since last night, but after half an hour of writing and deleting i gave up.
Now I feel the same, it seems that no matter what I write makes no sense. I should probably blame the rainy weather or maybe my spinning head and sore throat.
Last week I was really happy Spring arrived. My flowers were blooming along the driveway, enjoyed some time in the park with Tiffany, but suddenly everything changed. Started with some wind and then few showers and now is dark and rainy.
Yesterday I did some baking, nothing new I know. I baked some brown sugar cookies, 2 yeast banana breads and honey pine nuts muffins.
I baked in the past using honey and I love baking with honey but in most of the honey baked goods you can hardly tell they it is there. Oh, but these one smell like honey, taste like honey and are addictive.
Honestly, what tempt me to try these was the addition of the pine nuts. I love pine nuts, they are high in (good) fat and nutrients. I like sprinkle some over my salads or even use some in toast bread. 
These muffins are healthy, the honey gives them a fantastic texture, more like a cupcake than a dense muffin, perfect treat in the morning or as a (midnight) snack. 
Next time I’m thinking of adding some pine nuts to the batter itself, giving it a little crunchy bite and maybe, but just maybe, use 1/3 cup sugar instead of 1/2.

It’s a little difficult to write about Sara since I can say I love and hate her in the same time. Sounds confusing, right?

Now you see why I love her, and the hate, well, it all goes back to facing the bathroom scale …

These would go perfectly with my lunch…and my dinner…and my breakfast!!! I am going to try this recipe right away – I agree – usually you can't taste the honey!

semintele de pin sunt ceva cu totul nou pentru simtul meu gustativ,aici in romania au ajuns sa aiba un pret prohibitiv,dar stiu ca totusi nu ma pot lipsi de ele.initial le-am luat pentru hummus si m-am trezit ca le-am pus tot in niste muffins ,cu bananae si capsuni,parca,asta acum vreo 2 ani,la inceputurile blogului meu,si au fost formidabile .ai dreptate,mierea le da o textura si un gust si miros deosebite,mai ales cea poliflora,care mie imi pare mereu cea mai complexa ca mireasma.gata ,am vorbit destul ,ma duc sa vad ce-i cu votul ala cu mamici…:)

I know what you mean being hard sometimes to find the right words to write, but as I read "Oh, but these one smell like honey…" my hand that hold the coffee cup stopped in the air and somehow I could smell the muffins. You described it so well that I wished I'd have a teleportation machine, that could beam me some hours back in time directly into your kitchen.

I often get brain farts too when it comes to writing my blog. Sometimes all of my energy and creativity goes into the recipe and I need to just let it speak for itself.

Muffins are one of my favorite things to bake. Yours look delicious! I love the honey and that it comes through.

Roxana-I never thought about using pine nuts in other than cookies, or in a pasta dish. What a pretty, and yummy muffins creation. Thanks for sharing.

I've never had pine nuts in a muffin before but I do love them! You have a way of making something so "simple" look absolutely beautiful. I need one of these to put butter on please!

I've been having those I-don't-know-what-to-write moments, too, lately. It's frustrating but at the end of the day, you can't really force yourself to write, right? I'm glad you posted these muffins–I've never baked with pine nuts before. I'm especially attracted to the honey flavor. Will have to set this aside to try sometime. Have a great weekend! :-)

Love these. Did you know pine nuts are soooo expensive right now? It's so sad, because I just like to eat them right out of the bag.

Si pe astea trebuie NEAPARAT sa le incerc. Eu nu prea gatesc cu miere, pentru ca, asa cum spui si tu,nu i se simte gustul. Dar merg pe mana ta la briosele astea. Mersic

Mmmm, I love pine nuts in sweet baked goods. These look wonderful. It doesn't matter if you can't find the words sometimes…just saying that is a post in itself! Sorry your head is spinniing and you have a sore throat :(

I do understand exactly what you mean about writing your post, every now and then I just sit there staring at the computer…..sigh

Thanks for sharing a wonderful muffin recipe with us, I have to get out to trader joes to get some pine nuts,they are the least expensive there.

I understand about "not knowing what to write" I'm having the same issues lately. I'm glad at least you get to bake and I'm very happy to be an inspiration! Your muffins came out amazing. You make me want to make them again :)
And you have no idea of how many of your recipes I have bookmarked and added to my wish-to-bake-soon list :) see? we inspire (and love/hate) each other :)
