Magic bars

I would like to start this post by saying Thank You for all your sweet and encouraging words about my health. I know if I pay close attention to what I eat it’s not going to get out of hand. 
It’s going to be hard at first, especially since I’m used to eat cheese at almost every meal. Since I found out I only had a thin slice of goat cheese, that kind with blueberries and vanilla, yummy. 
I’m still going to bake, probably most of my future posts are going to be vegan, but here and there I’ll put in a little butter, milk or eggs. I can not take the dairy out of my family’s meal just because I can’t have it.
Also, I still have a couple of recipes on my sleeve I haven’t shared with you. Like this one. 
Magic Bars
I can say, there are indeed magic, they disappeared in no time. 
I once tried the well known 7 layers bars but they didn’t turned out as I was expecting. These bars are 6 layers and they were perfect. They hold their shape after cutting, they were not too sweet or too dry. Just perfect.
The recipe calls for a little over 5 oz crushed crackers. I used graham crumbs and found it a little too much, I think 4 oz would be enough if you use store bought crumbs like I did. 
I also used lot more walnuts, but I think this is up to each one’s taste. I love walnuts!

These bars look great and I love walnuts too. I know what you mean about getting used to having an ingredient like cheese but everything is about learning a new habit! You can definitely do it!

Wow! These bars look perfect! Great snack and no kid prefers store candies when they see these bars. Lovely treat for special occasions too, like our Eid.

These look so good! I make something similar at Christmas called seven layer cookies and they are always a crowd pleaser. I am going to have to make these!

I'm happy you liked the bars Roxana, you have some great photos here!!! they're really delicious and of course that more walnuts are always better :) Regarding your health, you're far too young to be concerned, but of course that a good balance of everything we eat is always the best option…Have a great weekend and thank you for making the bars, I'm so happy when somebody likes something I made :) XoXo

With all those crunchy, chewy layers…no wonder these are magic bars. I should have made these and taken with me on my trip to Canada. They would have been so much better than the junk they serve us at airports :S

Your first picture is very cool. I like how the top bar is balancing on the bottom one…hehhe.

Roxana..this is something fabulous. I love bars especially energy bars. I love walnuts too. Will make this for my Piggies when they are back from for their sem break. Thanks for sharing the link for this recipe :) I can easily chomp down a few bars each time :)

Oh, these look excellent! I love they don't have butterscotch chips…ew, although they don't seem to stop me from sampling the 7 layer variety…I just find this version so much more appealing.

It will take some time to adjust to a new diet…but you'll feel so much better :) Time to copy this recipe~

Magic bars were my absolute favorite treat as a kid! They make me happy just thinking about them with the chocolate, coconut and nuts. I usually make them during the holidays. Maybe I can use those favorite ingredients to inspire a new recipe. Have a beautiful day Roxana <3

You are handling your diet changes with a wonderful attitude and I am sure you will share some wonderful new ideas and recipes with us. I hope that you will also allow yourself a treat every now and again and enjoy something "naughty" that is packed full of butter and cream and eggs.

Im so lame, magic bars are something I've still NEVER made. But always look at them with lustful eyes. Seriously, I need to get on it and make them, cuz they look SO good. I don't know what's going on with your no dairy thing, so Im gonna have to keep reading to see…But what a bummer!

I was never a fan of those infamous 7 layer bars – a little excessive for me.

Roxana, I read your last post in order to connect the dots. I totally get your reaction to the doctor's news…I was hit the same way about something else and I'm also having a difficult time digesting what I need to do. Let's send each other good energy and courage to make the proper decisions for our health.

These magic bars have brought back childhood memeories for me…Mom used to make these treats for us…those were the days ;o)

Wow! These look amazing! I'm sorry about your dairy issues but I know you'll work it out and create some amazing new recipes. There are so many more options today for restricted diets than there was even a few years ago. I look forward to seeing what you come up with!

I'm sure you will come up with a happy medium on your eating habits, but do take care of it, we want you around for a long time!

welcome to the world of plant based eating! :D i became vegan because of health issues too. but i fell in love with veggies and fruits. i wouldn't trade how i feel now for another other. let's do this together!

I love Magic Bars and also have the recipe on my blog which is probably very similar to how you made them. They're magic because they disappear so quickly. Although they're not what I'd call heart healthy they're worth the splurge.

I too love cheese and chocolate. It's not easy to cut back. Make sure that you exercise daily, it will help to bring all your numbers back where they should be. Plus you'll feel better from the exercising.
