Hi!  I’m Erin and I write over at Dinners, Dishes, and Desserts.  I excited to be here today.  Roxana is a great friend who is always there to help, and has such great ideas.  Today I am here to share a cookie recipe for Christmas.  Can you believe Christmas is almost here?  I can not believe how quickly this year has gone!

Peanut-Butter-Cup-Blossom-Cookies
One of my favorite Christmas cookies is Peanut Butter Blossoms.  You know, the peanut butter cookies with the Hershey kisses on top.  Well, I decided to take those to the next level this year.  Why not top them with a Reese’s Peanut Butter Cup?  Talk about peanut butter and chocolate heaven!  Which in case you don’t know me, is one of my favorite combinations.
I think I found a new favorite cookie!  These were absolutely over the top.  It was really hard to wait until they were cooled before I ate one.  The melty chocolate just looked so good.  And it was.  Trust me, these need to become a part of your holiday traditions this year!

Peanut Butter Cup Blossom Cookies

Ingredients

  • 1/2 cup shortening
  • 3/4 cup creamy peanut butter
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 eggs
  • 2 Tbsp milk
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 24 Reese's Peanut Butter Cups
  • 1/4 cup sugar (for dipping)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl for an electric mixer combine shortening and peanut butter. Mix until well blended.
  3. Add sugar and brown sugar, and mix until light and fluffy.
  4. Add egg, milk, and vanilla. Stir until well combined.
  5. Add flour, baking soda, and salt and mix until everything just comes together
  6. Using about 2 tablespoons of dough form into balls. Roll the balls through the extra sugar.
  7. Place on a baking sheet. Gently press down slightly on the dough.
  8. Bake for 12-15 minutes, until the cookies are lightly browned.
  9. Remove from oven, and immediately place a peanut butter cup on top. Press gently until the cookie starts to crack.
  10. Remove to a wire rack to cool completely.

These cookies look mouthwatering, but I don’t think it’s safe for me to make them. Why? Cause I’d eat them all up within a few days by myself. Seriously! Reeses Peanut Butter Cups are my weakness! ::fans self:: Props to you, though.
