Sandwich Sugar Cookies

I did it again. I mean cookies. I could not help myself.

Can you resist the temptation?
The story starts with me, doing my regular grocery shopping at Wegmans. I love this store. It has almost everything I neen so I don’t have to step into 10 stores to have my shopping done. A trip to Wegmans and BJ’s and I’m done. Those of you that don’t have a Wegmans around, let me tell it has a bulk section, actually it has two, but only one is the danger zone :) )
They have candy in bulk, all kinds of candy. After I said , thank God they removed the Christmas candy I see everywhere Valentine’s candy. I do love Valentine‘s, don’t get me wrong, but I’m so weak when it comes to candy, so so weak.
I did end up buying a couple of them, loved the conversation ones

I wanted to make some thumbprints cookies and use chocolate hearts instead of the kisses but today one, tomorrow two and by the time I got myself together I was out of candies :) )
To save the day I took out of the pantry some flour, sugar and from the fridge some butter and an egg. Sugar cookies !!!!!
These cookies are so easy to make. Mix flour and butter, add sugar and egg, cool, bake, eat – simple as that
Let’s turn the oven on and start baking :)

Ingredients

  • 2 cups all-purpose flour
  • 12 tbsp chilled butter
  • 1/3 cup sugar
  • 1 egg yolk
  • Nutella
  • peanut butter

Instructions

  1. Add flour and butter in a food processor
  2. Pulse until resembles fine breadcrumbs
  3. Add the sugar and the egg yolk
  4. Pulse few more times until the mixture comes together
  5. Place the dough in clear film and refrigerate for at least 30 minutes.
  6. When the dough is chilled, roll it out and do cut-outs. Place them on baking sheets and put them back in the refrigerator for another 5-10 minutes.
  7. Meanwhile heat the oven at 350 F. Bake the cookies for about 12 minutes until pale golden.
  8. Put them in an airtight container and leave few hours or overnight.
  9. Now, being a sugar addict I simply could not leave the cookies just like that so I decided to make sandwiches using Nutella or peanut-butter.

You can't post these cookies so late at night! Now I'm craving…what am I supposed to do? I really have to wait until tomorrow to bake something up? :)

Lovely cookies…yum… and the candies are a delight.. I have to control my daughter all the time inside any candy store.. but still she ends up having a big bag of them :)
